Make this healthy Tom Collins mocktail in just 5 minutes with 3 ingredients. The most refreshing mocktail you'll ever have is just as delicious as the original - but less sweet. Cucumber, lemon & soda water is all you need!

- Soda water can be switched for another unflavored sparkling water
- Lemon needs to be fresh - save the bottled kind for something else
- Cucumber - if you enjoy cucumber flavor it can be worth it splurging on a nice, organic and locally sourced cucumber as these tend to have more flavor
- Toothpick is used to create a decoration for the mocktail and can be skipped
How to make it
- Start by peeling the cucumber and cutting it into smaller pieces, then add these to a blender. Blend for a minute or so until there are no large pieces left.
- Pour the cucumber puree into a tumbler
- Squeeze in the lemon
- Close the lid tightly and shake for 15 seconds
- Fill up a highball glass with ice cubes
- Remove the top lid from the shaker, and pour the cucumber and lemon over the ice through the shaker's built-in strainer
- Fill up with soda water
- If you like, decorate with a slice of cucumber and some cucumber peel on a tooth pick

- Make it a cocktail by adding a shot of gin or vodka before shaking

A Tom Collins is traditionally served in a Highball or Collins glass (which to the untrained eye look the same), and I used a highball glass for the pictures here.
You can serve it in another type of glass as well. For example, this cucumber version looks amazing in a martini glass. Just add a few ice cubes when shaking the cucumber and lemon juice and then pour straight into your martini glass before topping up with soda water.
